Bright Summer Veggie Salad

Fresh and tasty summer tomatoes and sweet corn shine in this week’s Health-e-Recipe for Tomato and Corn Salad with Basil. Now’s the time to make the most of tomatoes and corn as their growing season peaks.

Tomatoes have plenty of the phytochemical lycopene, found to fight prostate and possibly other types of cancer. Along with the red bell peppers, they also contain loads of vitamin C, a protective antioxidant. Different varieties of corn have unique combinations of anthocyanins, beta-carotene, lutein and zeaxanthin. Fresh corn is a healthy food (despite manufacturers’ use of corn to make high fructose corn syrup that leads to weight gain that increases cancer risk).
