Spice Up Your Chicken Salad

Moroccan chicken-saladTired of the same old chicken salad with mayo? Our Health-e-Recipe for Moroccan Chicken Salad is a chance to try a delicious, healthy new version.

Chicken breast and hardboiled eggs are a common combination in Moroccan dishes (as in Bastilla, the chicken pie made with phyllo dough). In this recipe, these ingredients are flavored with cancer-preventive orange chunks, raisins, almonds and parsley. The dressing uses olive oil, orange juice, cinnamon, ginger and mild turmeric, so you end up with a savory and moist salad mixture.

Serve it on a bed of mixed greens or baby spinach. If you want, add another Moroccan touch by cooking some 5-minute whole-wheat couscous or tabouli (without the high-salt “flavor packet”), then cooling it to room temperature as a perfect accompaniment.
