Lemony Summer Soup

When it’s hot, this soup refreshes you with lemon, a classic Mediterranean ingredient. Using a few or all of this recipe’s cancer-preventing vegetables – carrots, celery, leek, onion and garlic – with a vegetable broth base adds even more vitamins and phytochemicals to the canned tomatoes‘ lycopene. This phytochemical in tomatoes increases when they are processed into canned products and juice. AICR-funded studies suggest that lycopene may be protective against prostate cancer.

Chickpeas have a natural buttery flavor plus the same benefits as most dry beans: cancer-fighting fiber and protein. They give you long-lasting energy. A dash of smoked Spanish paprika adds to the uniqueness of this delicious dish.
