Our easy Elegant Cheesy Spinach Cakes achieve the ideal: a healthy, low-calorie and delicious party food that helps to prevent cancer.

Spinach, like other dark leafy greens, contains the phytochemical lutein, which may benefit eye health. For this recipe, all you need is a muffin pan for every eight cheesy spinach cakes you want to make. Just blend pre-washed chopped baby spinach leaves with part-skim ricotta and Romano or Parmesan cheese plus garlic and eggs. With only 80 calories per two spinach cakes, this dish makes a delightful healthy appetizer or a side dish.
