A Peachy Chicken Dinner

Before peach season comes to a close, you may want to try our innovative Health-e-Recipe for Panko Crusted Chicken with Grilled Peach Salsa.

Panko are Japanese-style breadcrumbs valued for their lighter, crispier texture than regular packaged breadcrumbs. Blended with garlic powder and dashes of hot cayenne pepper, salt and freshly ground black pepper, they make lowly chicken cutlets into a tasty treat.

This recipe adds a salsa made of peaches, green onions, lime, cilantro and mint (plus spicy jalapeno, if you’re up for it), fortifying it with many anti-cancer phytochemicals found in all of these plant foods. You can make the peach salsa by itself, too. It’s a great accompaniment for baked fresh fish or a veggie burger.
