Stack Up Vegetable Protection

Look to your nearest farmer’s market or vegetable garden for the fresh, cancer-fighting vegetables that star in this week’s Health-e-Recipe for Eggplant, Tomato and Cheese Casserole.

Beautiful purple eggplants pair naturally with fresh basil, spinach, tomato sauce and cheeses featured in this low-calorie, lasagna-style casserole. This dish is easy to make partly because it uses jarred tomato sauce.

But there’s another reason: When tomatoes are processed at high temperatures to make tomato paste and sauce, their cancer-fighting phytochemical lycopene becomes much more concentrated. Scientists have found that lycopene may help prevent prostate cancer and are investigating its potential effects against breast, lung and endometrial cancers.

Along with the phytochemical lutein in spinach, plus basil and oregano – two herbs with high antioxidant content – and topped with delectable shredded cheese, this casserole is sure to become a summer favorite.
