Herbs Make Salad Sensational

By Posted on

Herbs can magically turn simple ingredients into sensational dishes, as in this week’s Health-e-Recipe for Herbed Italian White Beans.

This easy salad combines cancer-preventive garlic with healthful olive oil and dried sage, sautéed to maximize taste. Fresh basil is added afterwards. Because they come from plants, all herbs and spices contain phytochemicals that can protect your health.

This delectable blend of herbs works perfectly with white beans, called “cannellini” in Italian. Like all dry beans, cannellini supply fiber, which fights off colon cancer, plus protein and the B vitamin folate.

Add some garden tomatoes, salt, pepper and a little red wine vinegar, and you have a succulent salad that can be a light entree for lunch or dinner. For more delicious cancer-fighting recipes, visit the AICR Test Kitchen. Click here to subscribe to our weekly Health-e-Recipes.
