Elegant Chilled Tomato Soup

If you’re a fan of tomato soup, this week’s Health-e-Recipe for Chilled Roasted Tomato Soup puts a fantastic, cancer-fighting summer version of it on your table.

Fresh tomatoes taste best in the summer. Cooked tomatoes become concentrated in lycopene, a phytochemical that has been found to help slow the growth of prostate cancer.

We add fresh basil and rosemary, two herbs that set off the rich taste of roasted tomatoes.
