Cheesecake Low in Calories; High in Health

Wishing for a low-calorie strawberry cheesecake? This week’s Health-e-Recipe for Strawberry and Cheese Refrigerator Pie comes very close to making it come true.

At only 262 calories per slice, our luscious strawberry pie is a snap to make and beautiful to serve. A cup of sliced strawberries contain nearly twice the recommended daily amount of vitamin C, a cancer-fighting antioxidant, for adults.

Just put a prepared whole-wheat graham cracker crust in the oven for a few minutes. While it’s getting toasty, finely grate the outer fresh lemon peel, and blend it with cream cheese, sour cream sugar and vanilla. Put the filling in the crust and chill 1-2 hours.

Then wash, drain and hull the strawberries. Microwave the all-fruit spread and stir in the lemon juice. Toss with the berries until they are coated, then arrange them in the chilled crust.

Kids will adore this dessert, too. If you garnish it with a few fresh blueberrries, you’ll have a red-white-and-blue treat for July 4!
