Get Creative with Salsa

If you want to be a salsa maestro, try this week’s Health-e-Recipe for Black Bean and Orange Salsa.

It riffs on the traditional ingredients especially with the orange, a healthy sweet note with the tomato. Black beans are another healthy food, teeming with unique phytochemicals including saponins, lignans and phytosterols, all under study for potential to ward off cancer and heart disease. Beans and other legumes also provide magnesium, potassium, cancer-fighting folate and fiber.

Add a generous amount of this salsa to vegetables, poultry or fish. Or snack on salsa and homemade low-fat “chips”: oven-toasted whole-wheat pita bread wedges or fat-free tortillas cut into triangles.
